Instructions
Prepare the Potato
- Wash and thoroughly cook one medium-sized potato. You can boil it in a pot for 20-25 minutes, until easily pierced with a fork, or microwave it for about 15-20 minutes, depending on wattage.
Peel and Cool
- Once cooked, peel the potato and cut it into four large pieces. Allow it to cool completely.
Blend the Mousse
- In a high-speed blender, combine the cooled potato, khoya, sugar, sweetened condensed milk, whole milk, and saffron (previously steeped in warm milk, if using). Blend until completely smooth and creamy.
