Ingredients
For the Tahini Paste
- 8 to 10 Almonds
- 1 Tbsp Sesame Seeds white
- 1 Tbsp Peanuts
For the Baba Ghanoush
- 1 Tbsp Lemon Juice
- 1 Tbsp Olive Oil
- 1 tsp Cumin Seeds roasted
- ½ tsp Chili Powder
- 1-2 tsp Salt or to taste
Instructions
- Pierce the eggplant all over with a fork. This prevents it from exploding during roasting and allows steam to escape.
- Rub the eggplant with olive oil and place it directly over an open flame on the stovetop or grill. Alternatively, roast it under a broiler.
- Roast the eggplant, turning occasionally, until the skin is charred and the flesh is very soft and smoky, about 20-30 minutes.
- While the eggplant roasts, roast the garlic cloves alongside it until softened and fragrant.
- In a food processor or mortar and pestle, combine the almonds, sesame seeds, and peanuts.
- Process or grind until a smooth paste forms, scraping down the sides as needed. This is your tahini paste.
- Once the eggplant is cool enough to handle, scoop out the flesh into a bowl, discarding the charred skin.
- Add the roasted garlic cloves, tahini paste, lemon juice, roasted cumin seeds, chili powder, and salt to the bowl.
- Mix everything together until well combined and smooth. Taste and adjust seasonings as needed.
- Transfer the baba ghanoush to a serving dish. Drizzle with a little extra olive oil and a sprinkle of chili powder and roasted cumin seeds for garnish.
- Serve the baba ghanoush with warm pita bread, fresh vegetables, or as part of a mezze platter. Enjoy!
