Ingredients
Vada Pappu (Moong Dal Salad)
For the Tempering
- 1 Tbsp Oil
- ½ tsp Mustard Seeds
- 1 Chili finely chopped, green
- ¼ tsp Asafoetida hing
Panakam (Jaggery Drink)
- 2 cup Water
- ½ cup Jaggery grated or powdered
- 1 tsp Lemon Juice freshly squeezed
- ¼ tsp Ginger Powder dry
- ¼ tsp Pepper Powder black, freshly ground preferred
- ¼ tsp Cardamom Powder freshly ground preferred
- 5-6 Basil Leaves tulsi
- Salt a pinch
Instructions
- Wash the moong dal thoroughly under cold water until the water runs clear. This removes any impurities and starch. Soak the dal in fresh water for about 1 hour. Drain completely.
- In a bowl, combine the drained moong dal, chopped mango, grated carrot, grated coconut, and salt. Mix well to ensure the flavors meld.
- Heat the oil in a small pan over medium heat. Add the mustard seeds and let them splutter. This releases their nutty aroma. Add the chopped green chili and asafoetida. Sauté briefly until fragrant.
- Pour the tempering over the moong dal mixture. Add the lemon juice and chopped coriander. Mix gently to combine.
- In a separate bowl or pitcher, dissolve the jaggery in water, stirring until completely combined. Add the lemon juice, a pinch of salt, cardamom powder, dry ginger powder, and black pepper powder. Stir well.
- Strain the panakam through a fine-mesh sieve to remove any undissolved jaggery or spice particles. This ensures a smooth, refreshing drink. Add the basil leaves. Chill thoroughly before serving.
