Pankam / pankam is very traditional summer drink from south india . It is a aryuvedic energy drink witch sweetened naturally . Pankam is made with jaggery and some spices like dry ginger , black pepper corns and cardamom . According to aryuveda , pankam balancee three dosha ; vata , kapha and pitta during summer days . Pankam is offered to lord rama on ram navami .

Ingredients
- grated or powdered jaggery half cup
- dry ginger powder 1 tsp
- black pepper powder 1/2 tsp
- green cardamom powder 1 tsp
- a pinch of salt
- lemon juice 2 tsp
- water 3 cup
- 2-3 basil leaves for garnishing

Instructions
- First take grated jaggery or jaggery powder in a big bowl .
- Now add 3 cups of water into the jaggery and allow it to dissolve . Strain the liquid .
- Now take straind liquid , add dry ginger powder into this . mix well .
- Then add black pepper powder and cardamom powder . mix well .
- Now add lemon juice and a pinch of salt into this . Mix well .
- Now add some basil leaves into this . Panakam is ready . Pour into glasses and serve .
