Ingredients

- 1 tsp Cumin jeera
- 1 tsp Ginger paste
- 1/2 tsp Garam Masala
- 1.5 tsp Salt or to taste
- 3-4 Chili Peppers finely chopped; adjust to your spice preference, green, red and green chilies
- 1/2 tsp Cumin powder
Fats & Oils
- 2 tbsp Mustard Oil
- 2 tbsp Clarified Butter desi ghee preferred
Vegetables
- 1 cup Vegetables beans, cauliflower, diced seasonal vegetables such as carrots, etc., mixed, peas
Garnish (Optional)
- Coriander chopped, for garnish
Instructions
Preparing the Khichdi
- Wash the rice and urad dal thoroughly. In a deep pan or pot, heat mustard oil. Add cumin seeds and green chilies. Once fragrant, add the washed rice and dal. Stir well and sauté for 2-3 minutes.
Adding Spices and Vegetables
- Add turmeric powder, salt, ginger paste, and cumin powder. Mix well. Add about 4 cups of water (adjust as needed for desired consistency). Bring to a boil, then reduce heat to low, cover, and simmer until the rice and dal are cooked through and the water is absorbed (about 20-25 minutes).
Sautéing Vegetables
- While the khichdi simmers, heat ghee in a separate pan. Add the diced vegetables and sauté until slightly tender-crisp. Add garam masala and mix well.
