Instructions

Preparing the Khichdi

  • Wash the rice and urad dal thoroughly. In a deep pan or pot, heat mustard oil. Add cumin seeds and green chilies. Once fragrant, add the washed rice and dal. Stir well and sauté for 2-3 minutes.

Adding Spices and Vegetables

  • Add turmeric powder, salt, ginger paste, and cumin powder. Mix well. Add about 4 cups of water (adjust as needed for desired consistency). Bring to a boil, then reduce heat to low, cover, and simmer until the rice and dal are cooked through and the water is absorbed (about 20-25 minutes).

Sautéing Vegetables

  • While the khichdi simmers, heat ghee in a separate pan. Add the diced vegetables and sauté until slightly tender-crisp. Add garam masala and mix well.

Combining and Serving

  • Once the khichdi is cooked, gently stir in the sautéed vegetables. Garnish with fresh cilantro and serve hot. Enjoy your delicious and festive Uttar Pradesh Khichdi!
