Instructions

  • Thoroughly wash all herbs. This crucial step removes any impurities. Combine the washed herbs with milk in a pressure cooker. Cook for 2 whistles.
  • This pre-cooking step softens the herbs and enhances their shelf life. Spread the cooked herbs on a clean surface to sun-dry for one week.
  • Proper drying is essential for long-term storage. Store the dried herbs in an airtight container in a cool, dry place.
  • Clean the grinding stone (Ora Kal) with fresh water. Add a few drops of water to the surface of the stone. This creates the necessary moisture for grinding.

I love to cook the most authentic way. Most of my recipes are cooked either in claypot or kalchatti / soapstone. They are extremely beneficial as they retain the nutrients. Before cooking a recipe in these vessels I do in-depth research and make sure it is doable in any modular kitchen.
