Ingredients
Garnish & Assembly
- Mango cubed for garnish, ripe and raw
- Ice Cream Sticks
Instructions
- In a blender, combine the ripe mango, yogurt, and sugar for the sweet layer. Blend until smooth.
- In a separate blender, combine the raw mango, sugar, and green chili. Pulse a few times to break down the mango. Then, add the yogurt and blend until smooth.
- Pour the tangy mango puree into ice cream molds or small glasses. Freeze for 15 minutes to allow a slight set. This helps create distinct layers.
- Gently pour the sweet mango puree over the partially frozen tangy layer.
- Garnish with a mix of ripe and raw mango cubes.
- Insert ice cream sticks into the center of each mold.
- Freeze for 8-10 hours, or until solid.
- To demold, briefly dip the molds in warm water. Gently pull the ice cream out. Serve immediately and enjoy!
Recipe Notes
Good To Know
- The puree should be slightly thick in consistency.
- If you want to avoid spiciness, don’t add chili.
- For an extra creamy texture, strain the yogurt through a muslin cloth for a few hours beforehand to make hung curd, which reduces water content and prevents ice crystals from forming.
- If you prefer a stronger tang, add a tablespoon of lime juice or a pinch of black salt to highlight the raw mango’s sharpness and add depth typical of Indian desserts.
- To create a visually striking presentation, swirl in a ripple of pureed ripe mango just before freezing, or layer the ice cream with diced fresh mango and a sprinkle of chili powder for bursts of flavor and color.
- For a vegan version, substitute the yogurt with thick coconut cream and use maple syrup or agave nectar instead of sugar for a plant-based, tropical twist.
Expert Tips
- For a smoother ice cream, blend the mixture one last time after churning to break down any remaining ice crystals.
- Adjust the sweetness according to the sweetness of your mangoes. Taste the mixture before freezing and add more sugar if needed.
- If using fresh mangoes, ensure they are ripe but not overripe for the best flavor and texture.
Storage Instructions
- Store leftover ice cream in an airtight container in the freezer for up to 2 months. Allow it to soften slightly at room temperature before scooping.
