  • 500 gm Bitter Gourd karela; wash thoroughly and slice into 1/4-inch thick rounds

Prepare the Bitter Gourd

  • Wash and slice the bitter gourd into 1/4-inch thick rounds. Steam the slices until slightly tender but still firm, about 5-7 minutes. Spread them on a clean cotton cloth in a shaded area to dehydrate for at least 2-3 hours, or until slightly pliable.

Roast the Spices

  • Dry roast the coriander seeds, cumin seeds, fennel seeds, fenugreek seeds, and red chilies in a pan over medium heat until fragrant. Be careful not to burn them.

Grind the Spices

  • Roughly grind the roasted spices (excluding onion seeds). You can use a mortar and pestle or a spice grinder.

Combine and Marinate

  • In a large bowl, combine the ground spices, onion seeds, turmeric powder, salt, jaggery, and asafoetida. Add the dehydrated bitter gourd slices and mix gently but thoroughly. Let the mixture marinate for at least 2-3 hours, stirring occasionally. You may even let it sit overnight to develop deeper flavors.
