Ingredients

- 11 Dates dry, pitted and chopped

- 3 Jambu Chillies chopped, red
- 1/2 tsp Ginger Powder
- 1 tsp Panch Phoron
- 1 tbsp Lemon Juice
- 1 1/2 tsp Salt or to taste
Instructions
- Soak the dry dates in warm water for at least 30 minutes to soften them. This will make them easier to pit and chop.
- Pit the softened dates and chop them roughly. Remove the seeds from the red chilies and chop them as well.
- In a saucepan, combine the chopped dates, red chilies, and salt with 1/2 cup of water. Bring the mixture to a simmer over medium heat. Cook for a few minutes until the dates are very soft.
- Add the chopped tomatoes, ginger powder, and panch phoron to the saucepan. Cover and cook until the tomatoes are softened and the mixture thickens slightly. Stir occasionally to prevent sticking.
- Stir in the lemon juice and jaggery. The lemon juice adds brightness while the jaggery balances the flavors. Cook for another minute to allow the flavors to meld.
