Ingredients
Sweet Potato Mixture
- 500 gm Potato sweet
- 100 gm All-Purpose Flour
- 1 Tbsp Heavy Cream
Filling
- ½ cup Milk Powder
- ½ cup Coconut grated
- ½ cup Fruits dried, grated
- 2 Tbsp Gulkand
- 1 tsp Cardamom ground
Instructions
- Wash the sweet potatoes thoroughly.
- Pressure cook the sweet potatoes for 1-2 whistles until tender. Allow the pressure to release naturally. Peel and discard the skins.
- Mash the cooked sweet potatoes until smooth.
- In a bowl, combine the mashed sweet potato, all-purpose flour, and heavy cream.
- Knead the mixture into a soft dough. Divide the dough into small, equal-sized portions and roll them into smooth balls.
- In a separate bowl, prepare the filling by combining the milk powder, grated coconut, grated dried fruits, gulkand, and ground cardamom.
- Make a small indentation in each sweet potato ball and fill it with the prepared filling. Seal the filling completely inside the ball, ensuring a smooth surface. This prevents the filling from leaking while frying.
- Heat the oil in a deep pan over medium heat. Carefully drop the filled sweet potato balls into the hot oil.
- Fry the Gulab Jamun, turning them occasionally, until they achieve a light golden brown color. This ensures they are cooked through and have a crispy exterior.
- Remove the fried Gulab Jamun from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil.
- Prepare a sugar syrup by dissolving sugar in water and simmering until slightly thickened. Add rose water for a fragrant touch. Gently place the fried Gulab Jamun into the warm sugar syrup and allow them to soak for at least 2 hours. This allows the Gulab Jamun to absorb the syrup and become soft and flavorful.
Recipe Notes
Good To Know
- The sugar syrup ratio is 1:1 (1 cup sugar to 1 cup water). When the syrup starts boiling, add 2 tablespoons of milk to remove impurities. Strain the syrup for clarity.
- Add the hot, fried balls to the cooled syrup, or vice versa. Avoid adding both hot or both cold ingredients together.
- For richer flavor and smoother texture, roast the sweet potatoes instead of boiling them before mashing.
- For a vegan version, substitute milk powder with coconut milk powder and use plant-based milk.
- Add finely chopped dried fruits to the filling for enhanced texture and sweetness.
- Let the fried gulab jamuns rest for 5-10 minutes before soaking in syrup to prevent them from breaking apart.
Expert Tips
- Use a candy thermometer to ensure the sugar syrup reaches the correct consistency. The soft-ball stage (235-240°F) is ideal for gulab jamun syrup.
- Fry the gulab jamuns in small batches to maintain a consistent oil temperature and ensure even cooking.
- If the gulab jamuns become too hard after cooling, gently reheat the syrup and soak them again for a few minutes to soften them.
Storage Instructions
- Store leftover gulab jamuns in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week. Ensure they are submerged in the syrup to prevent them from drying out.
