  • Wash the curry leaves and pat them dry. If using tamarind, soak it in 1 cup of warm water for 15 minutes to soften and extract the pulp. Set the tamarind pulp aside.
  • Dry roast the ingredients for the masala paste one by one. Roasting enhances their flavors and aromas. Grind the roasted ingredients along with the fresh curry leaves into a smooth paste.
