Vegetables

  • 2 cup Cauliflower cut into small florets
  • 2 cup Carrot cut into small, half-inch pieces
  • 2 cup Radish cut into small, half-inch pieces
  • 10-12 Chili adjust to your spice preference; finely sliced, green

  • 6 Lemon Juice from large lemons; about 1/2 cup
  • 2 Tbsp Salt or to taste; adjust according to your preference
  • 1 tsp Turmeric Powder optional, for color and flavor

Instructions
 

Prepare the Spice Blend

  • Dry roast coriander seeds, carom seeds, fennel seeds, mustard seeds, and cumin seeds in a pan over medium heat until fragrant. Let cool completely, then grind into a fine powder using a spice grinder or mortar and pestle.

Combine Ingredients

  • In a large bowl, combine the cauliflower, carrots, radishes, and green chilies. Add the spice powder, turmeric powder (if using), and salt. Mix well to ensure all vegetables are evenly coated.

Jar and Ferment

  • Pack the vegetable mixture tightly into a clean glass jar. Pour the lemon juice over the vegetables, ensuring they are fully submerged. Leave about 1/2 inch of headspace at the top.

Sun-Ripen

  • Seal the jar tightly and place it in direct sunlight for 2-3 days, shaking gently once a day. The pickle will ferment and develop its characteristic tangy flavor.

Store and Enjoy

  • After 2-3 days, transfer the jar to a cool, dark place. Your pickle will continue to develop flavor over time. Allow at least a week before serving to fully enjoy the matured flavor. Store in the refrigerator after opening.
