Ingredients
Fruits
Sweetener
- 1 cup Jaggery or jaggery syrup
Spices
- 1 tsp Cardamom Powder
Nuts
- 4 Almonds soaked
- 4 Cashews
- 5 Pistachios
Liquid
- 2 cup Water
Instructions
- Hull and wash the strawberries. This ensures any dirt or debris is removed.
- Wash, peel, and chop the apple. Removing the peel helps create a smoother kulfi.
- In a blender, combine the strawberries, apple, jaggery (or jaggery syrup), cardamom powder, soaked almonds, cashews, pistachios, and water.
- Blend until completely smooth, adding more water if needed to reach a pourable consistency.
- Pour the mixture into kulfi molds.
- Secure the lids and insert the kulfi sticks. This helps keep the sticks centered while the kulfi freezes.
- Freeze overnight, or until the kulfi is solid.
- To unmold, briefly dip the molds in warm water. This loosens the kulfi from the mold.
- Gently pull the kulfis out of the molds and serve immediately. Enjoy!
Recipe Notes
Good To Know
- Instead of water and jaggery syrup, you can use milk and sugar.
- For a creamier texture without dairy, blend soaked cashews with a little water until smooth and add to the kulfi mixture before freezing.
- To enhance the natural colors and flavors, briefly macerate the strawberries in a tablespoon of jaggery for 10 minutes before mixing—this will intensify their sweetness and create a more vibrant hue.
- If you prefer a chunkier kulfi, reserve some finely chopped apple and dry fruits to fold in just before setting, giving each bite a pleasant crunch.
- For a festive presentation, unmold the kulfi and garnish with a drizzle of warm jaggery syrup and a sprinkle of coarsely crushed pistachios right before serving.
Expert Tips
- For a richer flavor, consider using full-fat coconut milk instead of water for a vegan version.
- Experiment with different spices like cardamom, saffron, or rose water to create unique flavor profiles.
- If using molds, lightly grease them with oil or cooking spray for easier removal.
Storage Instructions
- Store leftover kulfi in an airtight container in the freezer for up to 2 weeks.
- Allow the kulfi to soften slightly at room temperature for a few minutes before serving for optimal enjoyment.
