Ingredients
For the Thandai Powder
- 1/4 cup Almonds 60g
- 2 Tbsp Pistachios 60g
- 2 Tbsp Melon Seeds 30g (magaz)
- 3 Tbsp Poppy Seeds 30g (khuskhus)
- 4 Tbsp Fennel Seeds 30g (saunf)
- 2 tsp Peppercorns 10g (kali mirch)
- 15 Cardamom 10g (chhoti elaichi) pods
- 1/2 tsp Nutmeg jaifal
- 1 tsp Rose Petals dried
For the Kulfi
- 1 ltr Milk but toned milk will also work, preferably full-fat
- 2 Tbsp Cream optional, thickened cream
- 6 Tbsp Honey
- 4 Tbsp Thandai Powder see above
- 2 Tbsp Almonds slivered
- 1 Tbsp Pistachios blanched, chopped and almonds
- Pinch Saffron dissolved in 1 tsp warm milk
- 2 slices Bread brown, for a grainier texture, optional
Instructions
- Combine all Thandai powder ingredients in a grinder.
- Grind to a fine powder. Sift the powder through a fine-mesh sieve.
- Re-grind any coarse particles left in the sieve and sift again. Repeat until you have a fine powder. Store the Thandai powder in an airtight container until ready to use.
- In a large, heavy-bottomed pot, bring the milk to a boil over medium heat. Reduce the heat to low and simmer, stirring occasionally, until the milk reduces to about half its original volume. This slow reduction process concentrates the milk's flavor and creates a creamy texture.
- If using, stir in the malai (thickened cream). Continue to simmer and stir occasionally, scraping the bottom and sides of the pot to prevent sticking and burning.
- While the milk is reducing, sliver the almonds and blanch and chop the pistachios. Dissolve the saffron in 1 teaspoon of warm milk.
- If using bread for a grainier texture, trim the edges and tear the slices into pieces. Soak the bread in 1/4 cup of milk for 10 minutes. Then, blend the soaked bread into a smooth paste using a blender.
- Once the milk has reduced, stir in the Thandai powder, slivered almonds, chopped pistachios, saffron milk, and dried rose petals. Bring the mixture to a gentle boil and then remove from heat.
- Allow the mixture to cool slightly. Then, stir in the honey and blended bread paste (if using). Mix well to combine.
- Pour the Kulfi mixture into individual Kulfi molds or a freezer-safe container. Cover and freeze for at least 4-5 hours, or preferably overnight, until solid.
- To demold, gently rub the Kulfi molds between your hands to loosen. Run a knife around the edges and carefully remove the Kulfi. Serve chilled and enjoy!

Good To Know
- Bread is traditionally added to kulfi for a grainy texture, but it doesn't affect the taste and can be omitted.
- Crushed rose petals enhance the kulfi's appearance and provide a cooling effect, but they're optional.
- Honey is added to the cooled mixture, unlike sugar which requires further simmering to prevent ice crystals.
- While thandai powder contains ground nuts and spices, adding some whole almonds, pistachios, and cardamom pods provides a pleasant textural contrast.
