Kulfi Base
- 6 cup Milk
- 1/2 cup Sugar
- 3 Cardamom Pods crushed
- 2 tbsp Corn Flour

- In a deep, non-stick pan, combine the remaining milk and sugar. Bring to a boil over medium heat, then reduce heat to low and simmer for about 20 minutes, or until the milk has reduced by half. Stir occasionally to prevent sticking.
- Add the crushed cardamom pods to the simmering milk. The cardamom infuses the kulfi with a warm, aromatic flavor.
- Slowly whisk in the cornstarch slurry to the simmering milk. Cook, stirring continuously, for 2-3 minutes, or until the mixture thickens slightly. This gentle cooking ensures the cornstarch is fully activated and the kulfi achieves the desired consistency.
- Remove the pan from the heat and stir in the grated paneer and slivered almonds. The paneer adds a beautiful creaminess and richness to the kulfi.
