Ingredients
Dry Ingredients
- 0.75 cup All-Purpose Flour
- 3 tbsp Cocoa Powder
- 0.5 cup Sugar powdered
- 0.75 tsp Baking Powder
Wet Ingredients
- 1 Large Egg
- 0.25 cup Butter melted, unsalted
- 0.5 tsp Apple Cider Vinegar
- 0.25 tsp Vanilla Extract
Fruit & Filling
- 1 Cooking Apple and diced, cored, medium, peeled
- 2 tbsp Raspberry Preserves or any fruit preserve
Chocolate Honey Syrup
- 0.5 cup Milk Chocolate grated
- 2 tbsp Honey
- 1 tbsp Butter unsalted
Instructions
- Prepare the apple by peeling, coring, and dicing it. Toss the diced apple with apple cider vinegar. This prevents browning and adds a subtle tang.
- In a bowl, whisk together the all-purpose flour, cocoa powder, and baking powder. Sifting these dry ingredients helps create a light and airy pudding texture.
- Grease a pudding mold with butter and dust it lightly with flour. This ensures the pudding won't stick and will release easily after steaming.
- Fill a pressure cooker with about 1/4 inch of water and bring it to a boil. Cover the cooker with the lid, but omit the regulator.
- In a large bowl, cream together the powdered sugar, melted butter, and egg until light and fluffy.
- Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Fold in the diced apple and raspberry preserves. Distribute the fruit evenly throughout the batter.
- Pour the batter into the prepared pudding mold. Cover the mold tightly with aluminum foil to prevent condensation from dripping onto the pudding.
- Place a cooking rack or ring at the bottom of the pressure cooker. Carefully place the pudding mold on the rack and steam for 45 minutes over medium heat.
- Allow the pressure cooker to release naturally before opening the lid. To check for doneness, insert a toothpick or knife into the center of the pudding. If it comes out clean, the pudding is ready.
- While the pudding steams, prepare the chocolate honey syrup. Melt the grated chocolate in a double boiler or in the microwave in short bursts, stirring frequently. Once melted, stir in the honey and butter until smooth and glossy.
- Carefully unmold the pudding onto a serving plate. Drizzle generously with the warm chocolate honey syrup. Serve immediately and enjoy!
Recipe Notes
Good To Know
- You can also microwave the pudding on high for 5-6 minutes, or until firm. Use a microwave-safe dish and cover with a thick grease-proof sheet instead of foil.
- For extra depth of flavor, add a tablespoon of espresso or strong brewed coffee to the batter.
- If you prefer a lighter texture, substitute half the refined flour with ground almonds or hazelnut meal.
- To prevent the pudding from becoming soggy, line the base and sides of your steaming basin with parchment paper.
- The steamed pudding can be made a day ahead; simply re-steam or microwave individual portions briefly before serving.
Expert Tips
- For a visually appealing presentation, arrange the fruit in decorative patterns before steaming.
- If using apples, toss them with a little lemon juice to prevent browning.
- A dollop of whipped cream or a scoop of vanilla ice cream makes a perfect accompaniment to this warm pudding.
Storage Instructions
- Store leftover pudding in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or steamer before serving.
