- 1 cup Superfine Sugar also known as caster sugar
- 1 tsp Vanilla Extract
- 1 tsp Vinegar white
- 1 tbsp Corn Flour also known as cornflour
For the Topping
- 2 cup Heavy Whipping Cream chilled
- 1 cup Mango Puree homemade (see instructions) or store-bought
- 1 Mango for topping, ripe, sliced
- 10 Cherries halved or quartered, fresh
Instructions
Prepare the Meringue
- Beat egg whites until soft peaks form.
- Gradually add sugar, beating until stiff, glossy peaks form. This takes about 6-7 minutes.
- Beat in vanilla extract and white vinegar.
- Gently fold in cornstarch using a spatula.
Bake the Meringue
- Line a baking sheet with parchment paper. Pipe or spread the meringue into a rough circle.
- Bake in a preheated oven at 130°C (265°F) for 1 hour. Turn off the oven and let the meringue cool completely inside with the oven door slightly ajar.
Make the Mango Puree
- Blend ripe mangoes until smooth. Simmer with a small amount of sugar (adjust to taste) until slightly thickened.
Assemble the Pavlova
- Whip the heavy cream until stiff peaks form. Do not add sugar.
- Place the cooled meringue on a serving plate.
- Spread whipped cream evenly over the meringue.
- Top with mango puree, sliced mangoes, and cherries.
