Prepare the Tikkis

  • Combine rolled oats, mashed chickpeas, spinach, grated cauliflower, grated paneer, grated ginger, flour, carom seeds, fennel seeds, salt, and pepper in a large bowl. Mix well to combine.
  • Shape the mixture into 4 flat patties.
  • Coat the patties with breadcrumbs.
  • Heat oil in a pan over medium heat. Shallow fry the tikkis for 2-3 minutes per side, or until golden brown and cooked through.

Assemble the Burgers

  • Lightly butter the cut sides of the burger buns and toast them in a pan until lightly browned.
  • In the same pan, sauté the sliced bell pepper for about 1 minute until slightly softened.
  • Spread mayonnaise on the bottom half of each bun. Layer with sautéed bell pepper, sliced tomatoes, a spinach and oat tikki, and top with the other bun half.
  • Serve immediately and enjoy!
