Ingredients
 

Vegetables

  • 1 cup Spinach fresh, chopped
  • 1 medium Potato peeled and thinly sliced
  • 2 Chilies finely chopped (adjust to taste), green

Eggs & Spices

  • 3 Eggs
  • 1.5 tsp Salt or to taste
  • 0.5 tsp Pepper ground, black

  • 2 tbsp Oil vegetable or canola oil

Instructions
 

Prepare the Egg Mixture

  • Break the eggs into a mixing bowl. Add salt, black pepper, green chilies, and spinach. Whisk until well combined.

Cook the Potatoes

  • Heat the oil in a non-stick pan over medium heat. Add the sliced potatoes and cook until lightly golden brown, flipping halfway through. Remove the potatoes from the pan and set aside.

Cook the Omelette

  • Pour the egg mixture into the same pan. Cook for a few minutes, until the edges begin to set. Sprinkle the cooked potatoes evenly over the top of the omelette.

Finish Cooking

  • Reduce heat to low, cover the pan with a lid, and continue to cook until the eggs are fully set and the omelette is cooked through. You can gently lift an edge to check for doneness.
