Ingredients
For the Omelette
- 2 Large Eggs
- 1 tbsp Heavy Cream or milk
- Salt And Pepper to taste
For the Filling
- 1/2 cup Chicken cooked, rotisserie chicken works well, shredded
- 1/4 cup Baby Spinach washed and chopped
- 1 tbsp Cream Cheese softened
- 1 tbsp Cream sour
- 1/4 cup Cheddar Cheese shredded
Optional Extras
- 1 Tortilla Or Wrap for serving
Instructions
Prepare the Filling
- Combine softened cream cheese, sour cream, half the shredded cheddar cheese, cooked chicken, and spinach in a microwave-safe bowl. Mix well.
Whisk the Eggs
- In a separate bowl, whisk together eggs, heavy cream, salt, and pepper until light and frothy.
Combine and Microwave
- Pour the egg mixture into the bowl with the chicken and spinach mixture. Stir gently to combine.
- Microwave on high for 1 minute and 30 seconds. Remove and stir gently to break up the omelette.
Finish and Serve
- Sprinkle the remaining cheddar cheese over the omelette. Microwave for another 30 seconds, or until the cheese is melted and the omelette is cooked through. Serve immediately, optionally wrapped in a tortilla or multigrain wrap.
