Ingredients
For the Potatoes
For the Vegetable Saute
- 1/4 cup Onions finely chopped, green, white and green parts separated
- 1 medium Bell Peppers any color, finely chopped
- 1/4 tsp Chili Powder adjust to taste, red
- 1/2 tsp Turmeric Powder for color, optional
- 1 tsp Garam Masala for additional flavor, optional
- 1.5 tbsp Coriander finely chopped
Instructions
Prepare the Potatoes
- Peel and dice the potatoes. Season with salt and fry in olive oil until lightly golden and crispy. Set aside.
Saute the Vegetables
- In the same pan, add a little more oil. Sauté the white parts of the green onions for a minute, then add the bell pepper. Cook until slightly softened.
- Stir in the red chili powder, turmeric (if using), garam masala (if using), and salt. Add the green parts of the green onions and cilantro. Mix well and remove from heat.
Make the Omelette
- In a bowl, whisk together the eggs, milk, and a pinch of salt. Add the cooked potatoes and vegetable mixture.
- Lightly grease a frying pan with butter or olive oil over medium-low heat. Pour in the egg mixture. Cook until the bottom is set, then gently flip and cook the other side until golden brown and cooked through.
Serve
- Garnish with remaining green onions and serve hot.
