Ingredients
For the Schezwan Tomato Puree:

- 1 cup Rice Flour
For Seasoning:
- 2 tbsp Vegetable Oil
- 0.5 tsp Fennel Seed saunf
- 1 sprig Curry Leaves
- Water as needed, for adjusting puree consistency
Instructions
Prepare the Schezwan Tomato Puree
- Grind together the tomatoes, onion, chilies, garlic, ginger, Schezwan sauce, sugar, soy sauce, pepper, vinegar, and salt into a smooth puree. Add water as needed to achieve a smooth, pourable consistency. The total amount should be approximately 2 cups.
Cook the Kozhukattai Dough
- Heat oil in a pan. Add the tomato puree and bring to a boil. Reduce heat to medium.
- Stir in the rice flour gradually, mixing thoroughly from the bottom of the pan until all moisture is absorbed and the dough comes together.
- Remove from heat and let the dough cool slightly.
Shape and Steam the Rice Balls
- Once cooled, roll the dough into small, marble-sized balls.
- Steam the rice balls for approximately 15 minutes, or until cooked through.
Finish and Serve
- Heat oil in a pan. Add fennel seeds and curry leaves; allow them to splutter.
- Add the steamed rice balls and gently toss to coat them in the oil and seasonings.
- Serve the Tomato Schezwan Ammini Kozhukattai immediately.
