Ingredients
For the Spinach Filling:
- 2 tbsp Olive Oil
- 1 Onion finely chopped
- 2 clove Garlic minced
- 1 Chili finely chopped (adjust to taste), green
- 250 grams Spinach and roughly chopped, fresh, washed
- 100 grams Cottage Cheese indian cottage cheese, crumbled
- 50 grams Cheese grated cheddar or mozzarella
- 1 tbsp Pepper Sauce or 1/2 teaspoon red pepper flakes, red
- 1/2 tsp Chili Flakes or to taste
- 1.5 tsp Salt or to taste
- 1/4 tsp Pepper black, ground (optional)
Instructions
Prepare the Spinach Filling
- Heat olive oil in a pan over medium heat. Add the chopped onion and sauté for 1 minute until softened.
- Add the minced garlic and green chili; sauté for another 30 seconds until fragrant.
- Add the chopped spinach and sauté for 2-3 minutes, until wilted.
- Remove from heat and transfer the spinach mixture to a bowl. Add the crumbled paneer, grated cheese, red pepper sauce (or flakes), chili flakes, salt, and black pepper (if using). Mix well to combine.
Assemble the Sandwiches
- Lightly brush the bread slices with butter or olive oil.
- Spread the spinach and paneer mixture evenly over two slices of bread.
- Top with the remaining bread slices.
Cook the Sandwiches
- Preheat your grill or griddle to medium heat.
