Ingredients
 

For the Spinach Filling:

  • 2 tbsp Olive Oil
  • 1 Onion finely chopped
  • 2 clove Garlic minced
  • 1 Chili finely chopped (adjust to taste), green
  • 250 grams Spinach and roughly chopped, fresh, washed
  • 100 grams Cottage Cheese indian cottage cheese, crumbled
  • 50 grams Cheese grated cheddar or mozzarella
  • 1 tbsp Pepper Sauce or 1/2 teaspoon red pepper flakes, red
  • 1/2 tsp Chili Flakes or to taste
  • 1.5 tsp Salt or to taste
  • 1/4 tsp Pepper black, ground (optional)

For the Sandwich:

  • 4 slices Bread your favorite type of bread
  • 1 tbsp Butter for brushing the bread

Instructions
 

Prepare the Spinach Filling

  • Heat olive oil in a pan over medium heat. Add the chopped onion and sauté for 1 minute until softened.
  • Add the minced garlic and green chili; sauté for another 30 seconds until fragrant.
  • Add the chopped spinach and sauté for 2-3 minutes, until wilted.
  • Remove from heat and transfer the spinach mixture to a bowl. Add the crumbled paneer, grated cheese, red pepper sauce (or flakes), chili flakes, salt, and black pepper (if using). Mix well to combine.

Assemble the Sandwiches

  • Lightly brush the bread slices with butter or olive oil.
  • Spread the spinach and paneer mixture evenly over two slices of bread.
  • Top with the remaining bread slices.

Cook the Sandwiches

  • Preheat your grill or griddle to medium heat.
  • Cook the sandwiches for 2-3 minutes per side, or until golden brown and the cheese is melted and bubbly. Alternatively, you can cook in a panini press or microwave for 2-3 minutes.
  • Cut each sandwich in half and serve immediately.
