Prepare the Masala Filling

  • Heat butter in a pan over medium heat. Add the chopped onions and sauté for 1-2 minutes until softened. Add the minced garlic and sauté until fragrant (about 30 seconds).
  • Add the chopped tomatoes, turmeric powder, red chili powder, pav bhaji masala, and salt. Mix well and cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and the masala thickens slightly. Add a splash of water if needed to prevent sticking.
  • Stir in the chopped cilantro and remove from heat.

Toast the Pav Buns

  • Lightly butter both sides of each pav bun. Heat a griddle or tawa over medium heat. Toast the pav buns until lightly golden brown on both sides.

Assemble and Serve

  • Slice the pav buns in half. Spoon the prepared masala generously into the bottom half of each bun. Top with the other half of the bun.
  • Serve the Masala Pav immediately, garnished with a lemon wedge and optionally, green chutney.
