Ingredients
 

Rice & Lentils

  • 1 cup Basmati Rice long grain rice preferred for best texture. rinse thoroughly before cooking.
  • 1/4 cup Avara Paruppu also known as hyacinth beans; split and rinsed.

Aromatics & Spices

Other Ingredients

  • 4 tbsp Coconut fresh, shredded or cut into small pieces
  • 1 medium Tomato finely chopped
  • 1 1/2 tsp Salt or to taste
  • 2 cup Water may need slightly more depending on rice type and desired consistency

Instructions
 

Preparation

  • Soak the rice and avara paruppu in water for 20 minutes. Rinse well and set aside.

Sautéing Aromatics

  • Heat the groundnut oil in a pressure cooker. Add mustard seeds and let them splutter. Add crushed garlic and sauté for about a minute.

Adding Vegetables and Spices

  • Add the chopped onion and sauté until lightly browned. Add the red chilies, curry leaves, and coriander leaves. Sauté for another minute.

Incorporating Flavor

  • Add the chopped tomato, salt, red chili powder, and turmeric powder. Sauté for about a minute. Stir in the coconut pieces and fry for two minutes.

Cooking the Rice and Lentils

  • Pour in 2 cups of water (or 2 1/2 cups for a softer rice texture). Bring to a boil.

Pressure Cooking

  • Add the rinsed rice and avara paruppu. Close the lid and pressure cook for 3 whistles.

Resting & Serving

  • Once the pressure is released naturally, gently fluff the rice with a fork. Serve hot.
