Instructions

  • In a bowl, soak the soya chunks in lukewarm water or vegetable stock for 15 minutes to rehydrate them. This ensures a tender texture.
  • Drain the soya chunks thoroughly and place them in a mixing bowl.
  • Add the mashed potatoes, chopped jalapeños, ginger-garlic paste, black pepper, Italian seasoning, red pepper flakes, and salt to the bowl. Mix well to combine all the ingredients.
  • Take a small portion of the mixture and flatten it in your palm. Place a small amount of shredded cheddar cheese and a mozzarella cube in the center.
  • Gently shape the mixture around the cheese, forming a ball. Repeat this process with the remaining mixture and cheese.
  • Roll each ball in the breadcrumbs, ensuring they are fully coated. This will create a crispy exterior when fried.
  • Place the breaded soya balls on a plate or tray and refrigerate for at least 10 minutes. Chilling helps them firm up and prevents them from falling apart during frying.
  • While the balls are chilling, prepare the creamy dip by combining the softened cream cheese and red chili sauce in a small bowl. Mix until smooth.
  • Heat the oil in a frying pan over medium heat. Ensure the oil is hot enough before adding the soya balls to prevent them from absorbing too much oil.
  • Carefully place the chilled soya balls in the hot oil and fry until they are golden brown and crispy, turning occasionally for even cooking.
  • Remove the fried soya balls from the pan and place them on a plate lined with paper towels to absorb excess oil.
  • Serve the hot Soya Jalapeño Popper Balls immediately with the creamy dipping sauce. Garnish with fresh parsley, basil leaves, and a drizzle of tomato ketchup.

Good To Know

  • Make ahead: Shape the cheese balls, freeze on a tray, then store in a freezer bag. Fry/bake from frozen, adding a few minutes to the cooking time.
  • Add smoked paprika or chipotle powder to the mixture for a smoky flavor.

Expert Tips

  • Reheat in a preheated oven at 350°F (175°C) for about 10 minutes, or until heated through.
