Ingredients
For the Spicy Chili Sauce
- 8 Chilies adjust quantity to your spice preference, red
- 8 clove Garlic
- 1/2 inch Ginger
- 1 medium Onion finely sliced
- 1 tbsp Mustard Seeds yellow
- 4 large Tomatoes blanched and peeled
- 2 tbsp Mustard Oil
- 1.5 tsp Salt or to taste
- 1/2 tsp Msg ajinomoto, optional; for umami flavor. substitute with 1/4 teaspoon of soy sauce.
For the Pasta and Vegetables
- 150 gm Pasta any shape; cook according to package directions
- 100 gm Vegetables beans, bell peppers, carrots, etc. or use 100g paneer (indian cottage cheese), mixed
- 50 gm Cheese mozzarella, optional; grated cheddar, or parmesan
Instructions
Prepare the Chili Sauce
- Boil red chilies and sliced onion in water for 10 minutes. Blanch tomatoes, peel, and set aside. Grind boiled chilies, onion, ginger, and garlic into a smooth paste.
Sauté Vegetables
- Heat 1 tbsp mustard oil in a wok until it begins to smoke. Add the mixed vegetables and sauté for 2-3 minutes. Set aside.
Cook the Sauce
- Add the remaining mustard oil to the wok. Add the chili paste and sauté for 3-4 minutes, stirring frequently. Add salt and yellow mustard seeds. Stir well.
Combine and Serve
- Add the cooked pasta and sautéed vegetables to the sauce. Mix thoroughly. Stir in cheese if desired. Serve immediately.
