  • Dry roast coriander seeds, cumin seeds, fennel seeds, mustard seeds, and fenugreek seeds in a pan over medium-high heat for 2-3 minutes, or until fragrant. Let them cool completely, then grind into a fine powder using a spice grinder or mortar and pestle.

Prepare the Green Chilies

  • Wash and thoroughly dry the green chilies. Cut each chili lengthwise into 4 pieces.

Combine and Cook

  • Heat mustard oil in a heavy-bottomed pan or kadhai over medium heat. Add the prepared spice powder and sauté for 1 minute, stirring constantly. Add the chopped green chilies and sauté for another 2 minutes.

Simmer and Finish

  • Reduce the heat to low, cover the pan, and simmer for 10-12 minutes, or until the chilies are slightly softened but still retain some texture. Stir in the lemon juice and mix gently. Remove from heat and let cool completely.
