Ingredients
Chillies & Spices
- 250 gm Chilies long, green, less spicy varieties recommended
- 5 tbsp Coriander Seeds
- 2 tbsp Cumin Seeds
- 2 tbsp Fennel Seeds saunf
- 1 tsp Mustard Seeds rai
- 1/4 tsp Fenugreek Seeds methi dana
- 1.5 tsp Salt adjust to taste
Other Ingredients
- 1 Lemon juiced
- 1/3 cup Mustard Oil or any high-heat oil
Instructions
Prepare the Spice Blend
- Dry roast coriander seeds, cumin seeds, fennel seeds, mustard seeds, and fenugreek seeds in a pan over medium-high heat for 2-3 minutes, or until fragrant. Let them cool completely, then grind into a fine powder using a spice grinder or mortar and pestle.
Prepare the Green Chilies
- Wash and thoroughly dry the green chilies. Cut each chili lengthwise into 4 pieces.
Combine and Cook
- Heat mustard oil in a heavy-bottomed pan or kadhai over medium heat. Add the prepared spice powder and sauté for 1 minute, stirring constantly. Add the chopped green chilies and sauté for another 2 minutes.
Simmer and Finish
- Reduce the heat to low, cover the pan, and simmer for 10-12 minutes, or until the chilies are slightly softened but still retain some texture. Stir in the lemon juice and mix gently. Remove from heat and let cool completely.
Store and Serve
- Transfer the Mirch Ka Achar to a clean, airtight container. Store in the refrigerator for at least 2-3 days to allow the flavors to meld. Serve with your favorite Indian dishes.
