- 2-2.5 tsp Salt adjust to taste; use sea salt or kosher salt for best results
- 5-7 Lime Juice freshly squeezed; amount may vary depending on lime juiciness. you may need more.
- 1/2 tsp Mustard Seeds adds a pleasant pungent note., optional
- 1/4 tsp Fenugreek Seeds adds a slightly bitter and pungent flavor., optional
Instructions
Preparation
- Wash and thoroughly dry the green chilies. Remove stems and cut into 1-inch pieces. Deseed if desired.
Preparing Turmeric and Ginger
- Wash, peel, and thinly slice the fresh turmeric. Julienne the ginger.
Salting and Marinating
- In separate bowls, combine the turmeric and ginger separately with 1 tsp of salt each. Add half of the green chilies to each bowl. Stir well and let stand for 10-15 minutes. Add more salt if needed.
Adding Lime Juice
- Add the lime juice to each bowl, ensuring the turmeric and ginger are almost fully submerged. Let marinate for at least 2 hours. The ginger will turn a pinkish hue.
Optional additions
- At this stage, you can add optional mustard seeds and fenugreek seeds to both bowls.
Finishing and Storage
- Transfer the turmeric and ginger pickles into separate sterilized jars. Store in the refrigerator. For optimal flavor, allow to sit for 1-2 days before serving. Consume within 10 days.
