Ingredients
Eggplant
- 250 gm Eggplant baingan, small-sized preferred
Spice Paste
- 1 Tbsp Onion Paste
- 1 tsp Ginger Paste
- 1 tsp Garlic Paste
- 1 Tbsp Tomato Paste
- 1 tsp Turmeric Paste
Spices
- 1 tsp Cumin Seeds or paste
- 1 tsp Coriander Powder
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder red
Other Ingredients
- 1/4 cup Yogurt
- 2 Tbsp Mustard Sauce
- 2 Tbsp Mustard Oil
- 1.5 tsp Salt or to taste
Instructions
- Wash the eggplants and cut them lengthwise. Rub the cut sides with turmeric powder, red chili powder, and salt. This helps to prevent the eggplant from absorbing too much oil and adds flavor.
- Heat 1 tablespoon of mustard oil in a pan over medium heat. Shallow fry the eggplants until they soften slightly and develop a light golden color. Cover the pan and cook until the eggplants are tender. Set aside.
- In another pan, heat the remaining mustard oil over medium heat. Add the onion paste, ginger paste, garlic paste, and tomato paste. Sauté for a few minutes until the mixture turns fragrant and slightly browned.
- Add the cumin seeds, coriander powder, turmeric paste, and salt to the pan. Stir continuously for about a minute until the spices are well combined and fragrant. This blooming of spices enhances their flavor.
- Reduce the heat to low and add the yogurt to the spice mixture. Stir well to combine. Be careful not to overheat the yogurt, as it might curdle.
- Gently add the cooked eggplants to the pan with the spice mixture. Sprinkle a little water to help the spices coat the eggplant evenly. Simmer for a few minutes until the flavors meld together.
- Garnish with mustard sauce and fresh coriander leaves. Serve hot with rice or roti.
