  • 1 bunch Spinach about 10 oz, washed and roughly chopped
  • 1 Tomato chopped
  • 3 Chilies finely chopped; adjust to your spice preference, green
  • 4 Garlic Cloves minced

Legumes & Grains

  • 1 cup Mung Bean split yellow lentils, rinsed, yellow

Other Ingredients

  • 1 tbsp Oil vegetable or any cooking oil
  • 10 Groundnuts optional, roasted and roughly crushed
  • 1.5 tsp Salt or to taste
  • 2 cup Water

Preparation

  • Rinse the moong dal thoroughly under cold water.

Sautéing Aromatics

  • Heat oil in a pot or pan over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add minced garlic and green chilies. Sauté for about 30 seconds until fragrant.

Adding Spices and Vegetables

  • Stir in turmeric powder and red chili powder. Sauté for another 15 seconds. Add the chopped tomato and sauté until it softens slightly.

Combining Dal and Spinach

  • Add the rinsed moong dal and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the dal is cooked through and tender. Stir occasionally to prevent sticking.

Finishing Touches

  • Stir in the chopped spinach. Cover and cook for another 5-7 minutes, or until the spinach wilts completely. Stir in salt and adjust seasoning to taste. If using groundnuts, add them now and stir to combine.
