Ingredients
 

For the Yogurt Mixture

  • 1 cup Yogurt greek yogurt or thick dahi works best
  • 2 tbsp Semolina also known as suji, rava, or sooji. fine semolina is preferred.
  • 1/2 tsp Salt adjust to taste
  • 1/4 tsp Pepper freshly ground, black, to taste
  • 1/4 cup Bell Peppers bell pepper, finely chopped; any color or a mix
  • 1/4 cup Bell Peppers finely chopped, red
  • 1/4 cup Bell Peppers finely chopped, yellow
  • 1 Chili finely chopped; adjust to your spice preference, green
  • 1/2 Onion finely chopped
  • 1/2 Tomato finely chopped

Prepare the Yogurt Mixture

  • Whisk the yogurt in a bowl until smooth.
  • Add semolina, salt, and black pepper. Mix well and let it sit for 5 minutes to allow the semolina to absorb some of the liquid.
  • Add the chopped bell peppers, green chili, onion, and tomato to the yogurt mixture. Mix thoroughly. Add a tablespoon of water if the mixture is too thick.

Assemble and Cook the Toast

  • Cut each slice of bread into four squares.
  • Dip each bread square into the yogurt mixture, ensuring it's fully coated with the vegetables.
  • Heat a non-stick pan or griddle over medium heat. Lightly brush with olive oil.
  • Place the coated bread squares on the hot pan. Cook for 2-3 minutes per side, or until golden brown and crisp.

Serve

  • Sprinkle with oregano flakes (optional).
  • Serve immediately. Enjoy!
