Ingredients
For the Yogurt Mixture
- 1 cup Yogurt greek yogurt or thick dahi works best
- 2 tbsp Semolina also known as suji, rava, or sooji. fine semolina is preferred.
- 1/2 tsp Salt adjust to taste
- 1/4 tsp Pepper freshly ground, black, to taste
- 1/4 cup Bell Peppers bell pepper, finely chopped; any color or a mix
- 1/4 cup Bell Peppers finely chopped, red
- 1/4 cup Bell Peppers finely chopped, yellow
- 1 Chili finely chopped; adjust to your spice preference, green
- 1/2 Onion finely chopped
- 1/2 Tomato finely chopped
For the Toast
- 2 slices Wheat Bread whole
- 1 tbsp Olive Oil or any cooking oil for brushing
- 1/2 tsp Oregano Flakes optional, for garnish
Instructions
Prepare the Yogurt Mixture
- Whisk the yogurt in a bowl until smooth.
- Add semolina, salt, and black pepper. Mix well and let it sit for 5 minutes to allow the semolina to absorb some of the liquid.
- Add the chopped bell peppers, green chili, onion, and tomato to the yogurt mixture. Mix thoroughly. Add a tablespoon of water if the mixture is too thick.
Assemble and Cook the Toast
- Cut each slice of bread into four squares.
- Dip each bread square into the yogurt mixture, ensuring it's fully coated with the vegetables.
- Heat a non-stick pan or griddle over medium heat. Lightly brush with olive oil.
- Place the coated bread squares on the hot pan. Cook for 2-3 minutes per side, or until golden brown and crisp.
Serve
- Sprinkle with oregano flakes (optional).
- Serve immediately. Enjoy!
