Ingredients
- 1 Eggs for semifreddo
- 4 Egg Yolk
- 100 gm Honey
- 300 gm Heavy Cream
- 300 ml Heavy Cream
- 1 tsp Vanilla Extract
- 3 tbsp Butter or sauce for sauce
- 50 gm Honey
- 1 Orange
- 1/2 Lemon
- 5 slices Apple
- 1 tsp Cinnamon
- 1 tsp Cinnamon
- 1 tsp Chilli Powder mirch
- 1/2 tsp Salt or as per taste
- 5 Almonds
- Water
- 100 gm Sugar for honeycomb
- 50 gm Honey
- 3/4 tsp Soda or salt salt
Instructions
Prepare the Semifreddo
- Whip the heavy cream with vanilla extract until thickened, but stop before stiff peaks form. Set aside.
- Mix egg yolks, whole egg, and 100g honey in a heatproof bowl. Place the bowl over a saucepan of simmering water (double boiler), ensuring the bottom of the bowl doesn't touch the water. Whisk constantly with an electric mixer until the mixture is pale yellow, thick, and creamy. Strain the mixture to remove any lumps.
- Let the egg mixture cool completely. Gently fold in the whipped cream in two additions, ensuring not to deflate the cream. Lightly grease a loaf pan and line it with plastic wrap. Pour the semifreddo mixture into the pan and freeze for at least 8 hours, or preferably overnight.
Make the Honeycomb Crumble
- In a heavy-bottomed saucepan, combine granulated sugar and honey. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture turns a deep amber color. Remove from heat and immediately stir in the baking soda (or salt).
- Pour the mixture onto a parchment-lined baking sheet and let it cool completely. Once cooled, break the honeycomb into small pieces.
Prepare the Spicy Citrus Sauce
- Melt butter in a saucepan over medium heat. Add honey, cinnamon, chili powder, orange zest, orange juice, and lemon juice. Bring to a simmer. Add apple slices and almonds; cook until apples are tender and glazed (about 5-7 minutes).
- Remove the apples and almonds from the sauce. Add water to the saucepan and bring to a simmer, allowing the sauce to thicken slightly. Season with salt to taste.
Assemble and Serve
- Slice the semifreddo into individual portions. Arrange a slice of semifreddo on each plate. Surround the semifreddo with honeycomb pieces, glazed apples, and almonds. Drizzle the spicy citrus sauce over the dessert and garnish with a strip of orange zest.
