Ingredients
Lava Cakes
- 129 gm Chocolate dark, semi-sweet
- 120 gm Butter for the cake
- 2 Large Eggs
- 70 gm Sugar granulated
- 70 gm All-Purpose Flour sifted
- 1 tsp Butter for greasing ramekins
Almond Crumble
- 100 gm Butter cold and cubed
- 100 gm Sugar granulated
- 100 gm All-Purpose Flour
- 120 gm Almonds slivered
- 1 pinch Salt
Strawberry Basil Coulis
- 2 cup Strawberries chopped
- 50 ml Fruit Juice mixed
- 2 tbsp Sugar granulated
- 4-5 Basil Leaves fresh
Instructions
For the Lava Cakes
- Melt the dark chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth. This gentle heating prevents scorching.
- In a separate bowl, whisk the eggs and granulated sugar until light and fluffy. This creates air for a tender cake.
- Remove the melted chocolate from the heat and stir in the butter until melted and combined.
- Gradually add the chocolate mixture to the egg mixture, whisking constantly to prevent the eggs from curdling.
- Gently fold in the sifted flour until just incorporated. Avoid overmixing, which can lead to a tough cake.
- Grease two ramekins with butter. Fill each ramekin about ¾ full with the batter.
- Place the ramekins on a baking sheet and bake in a preheated oven at 180°C (350°F) for 15 minutes. The cakes should have a slightly firm edge but a molten center.
For the Almond Crumble
- In a bowl, combine the flour, granulated sugar, and salt.
- Cut in the cold, cubed butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Stir in the slivered almonds.
- Spread the crumble mixture on a baking sheet lined with parchment paper. Bake in a preheated oven at 160°C (325°F) until golden brown, about 15-20 minutes.
For the Strawberry Basil Coulis
- Combine the chopped strawberries, mixed fruit juice, and granulated sugar in a saucepan over medium heat.
- Cook, stirring occasionally, until the strawberries have softened and the mixture has thickened slightly, about 10-15 minutes.
- Stir in the fresh basil leaves. Remove from heat and let cool slightly.
- Transfer the mixture to a blender and blend until smooth.
- To serve, carefully invert the warm lava cakes onto plates. Top with a scoop of vanilla ice cream, a generous sprinkle of almond crumble, and a drizzle of strawberry basil coulis.
