Ingredients
 

Chicken & Marinade

  • 1 lb Chicken boneless, cut into 1-inch pieces, skinless thighs or breasts
  • 1 cup Yogurt also known as curd
  • 1 tsp Turmeric powder

Aromatics & Spices

  • 1 medium Onion finely chopped
  • 1 medium Tomato finely chopped
  • 2 tsp Chili Powder adjust to your spice preference, red
  • 1 tsp Salt or to taste
  • 3 Cardamom elaichi, green cardamom pods
  • 2 Cloves
  • 1 small stick Cinnamon
  • 2 tsp Ginger 2 tsp ginger garlic paste

  • 3 tbsp Oil vegetable or canola

Instructions
 

Sauté Aromatics

  • Heat oil in a large pot or Dutch oven over medium heat. Add cinnamon stick, cardamom pods, and cloves. Sauté for 1 minute until fragrant.
  • Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  • Stir in the ginger-garlic paste and cook for another minute until fragrant.

Build the Gravy

  • Add curry leaves and chopped tomatoes. Cook for 2-3 minutes until softened.
  • Stir in turmeric powder, red chili powder, and salt. Cook for 1 minute, stirring constantly.
  • Add the yogurt and cook for 2-3 minutes, stirring continuously to prevent curdling.

Simmer the Chicken

  • Add the chicken pieces to the gravy. Mix well to coat the chicken evenly in the sauce.
  • Bring to a simmer, then reduce heat to low. Cover and cook for 15-20 minutes, or until the chicken is cooked through and tender.
  • Stir in the chopped coriander (or coriander paste). Simmer for another 2-3 minutes to allow the flavors to meld.

Serve

  • Serve the Spicy Chicken Coriander Gravy hot with rice, roti, or naan.
