Ingredients
For the Tofu Filling
- 300 gm Or Extra-Firm Tofu firm, pressed and cubed
- 1 Onion finely chopped
- 6 clove Garlic minced
- 2 Chilies finely chopped (adjust to your spice preference), red
- 1 tbsp Oyster Sauce or vegan oyster sauce
- 1 tsp Soy Sauce
- 1 tsp Fish Sauce mushroom sauce), or vegan fish sauce alternative (e.g.
- 1/2 cup Basil finely chopped, fresh
- 1.5 tsp Salt or to taste
- 1 tbsp Palm Sugar or brown sugar
- 1 tbsp Vegetable Oil
For the Sandwich
- 2 slices Bread your favorite type
Instructions
Prepare the Tofu Filling
- Heat the vegetable oil in a wok or large skillet over medium-high heat.
- Crush the red chilies and garlic together using a mortar and pestle (or finely mince). Add to the hot oil and stir-fry for about 30 seconds until fragrant.
- Add the cubed tofu and stir-fry for 2-3 minutes until lightly browned.
- Pour in the oyster sauce, soy sauce, and fish sauce. Stir to combine.
- Add salt and palm sugar to taste. Stir-fry for another minute.
- Stir in the chopped basil and cook for 30 seconds until wilted.
- Remove from heat and set aside to cool slightly.
Assemble the Sandwich
- Spread the cooled tofu filling evenly between two slices of bread.
- You can eat it as is or toast the sandwich in a pan or panini press until golden brown and the bread is crispy.
- Serve immediately and enjoy!
