Prepare the Tofu Filling

  • Heat the vegetable oil in a wok or large skillet over medium-high heat.
  • Crush the red chilies and garlic together using a mortar and pestle (or finely mince). Add to the hot oil and stir-fry for about 30 seconds until fragrant.
  • Add the cubed tofu and stir-fry for 2-3 minutes until lightly browned.
  • Pour in the oyster sauce, soy sauce, and fish sauce. Stir to combine.
  • Add salt and palm sugar to taste. Stir-fry for another minute.
  • Stir in the chopped basil and cook for 30 seconds until wilted.
  • Remove from heat and set aside to cool slightly.

Assemble the Sandwich

  • Spread the cooled tofu filling evenly between two slices of bread.
