Ingredients
For the Roti (Makes 4)
- 2 cup All-Purpose Flour atta
- 3/4 cup Water add more as needed to form a soft dough, approximately
- 1 tsp Salt
- 1 tbsp Oil
For the Achari Rajma Filling
- 1 cup Kidney Beans cooked and drained, rajma
- 1 tbsp Ginger finely chopped
- 1 tbsp Garlic finely chopped
- 1/2 tsp Turmeric haldi
- 1.5 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Coriander dhania
- 1/2 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 1 tbsp Tomato Ketchup
- 2 tbsp Coriander chopped, dhania
- 1.5 tsp Salt or to taste
- 1 tbsp Oil for cooking the filling
For Assembly
- 1/2 cup Onion finely chopped, for garnish
- 1/2 cup Tomato finely chopped, for garnish
- 1/2 cup Cabbage finely shredded, for garnish
- 1/4 cup Chutney green, your favorite recipe or store-bought
- 4 Toothpicks
Instructions
Prepare the Roti
- Combine flour, salt, and oil. Gradually add water, kneading until a soft dough forms. Divide into 4 equal portions, roll each into a thin circle.
- Cook on a hot griddle until lightly browned on both sides.
Make the Achari Rajma Filling
- Heat oil in a pan. Sauté ginger and garlic until fragrant.
- Add turmeric, chili powder, and coriander powder; sauté briefly.
- Add chopped onions and sauté until softened.
- Stir in tomatoes and a little water, cook until softened.
- Add tomato ketchup, salt, and cooked rajma. Mix well and cook for 1-2 minutes.
- Stir in chopped coriander. Remove from heat.
Assemble the Wraps
- Warm the rotis on a griddle.
- Spread a spoonful of the Achari Rajma filling onto each roti.
- Top with chopped onions, tomatoes, cabbage, and green chutney.
- Roll up tightly and secure with a toothpick.
- Serve immediately.
