Ingredients
For the Rajma
- 200 gm Kidney Beans rajma, red variety

- 0.5 tsp Chili Powder red
- 1 tsp Coriander Powder
- 0.5 tsp Garam Masala
- 1 Bay Leaf
- 1.5 Cardamom Pods
- 1.5 tsp Salt or to taste

Instructions
- Wash the kidney beans thoroughly and soak them in water for at least 7-8 hours or overnight. This helps them soften and cook evenly.
- Drain the soaked kidney beans. Place them in a pressure cooker with enough water to cover them by about 2 inches. Add salt and cook until tender, about 6-7 whistles. Alternatively, simmer in a pot until tender, about 1.5-2 hours.
- In a separate pot, boil the onions, garlic, and ginger until softened. This makes it easier to blend into a smooth paste. Once cooled slightly, blend into a smooth paste. Separately, blend the chopped tomatoes and green chilies into a puree.
- Heat oil in a large pot or kadhai over medium heat. Add the bay leaf and cardamom pods. Sauté for a minute until fragrant. This infuses the oil with their aromatic flavors.
- Add the onion-ginger-garlic paste to the pot. Sauté, stirring frequently, until the paste turns golden brown and the oil starts to separate. This process, called bhunaoing, deepens the flavor of the masala.
- Pour in the tomato-chili puree. Continue to sauté until the masala thickens and the oil begins to separate again. This indicates that the tomatoes are cooked and the flavors have melded.
- Add the dry spices—red chili powder, coriander powder, and garam masala—to the masala. Mix well and cook for a minute until fragrant. This blooms the spices and enhances their flavor.
- Add the cooked kidney beans to the masala. Stir gently to coat the beans in the rich gravy. If the gravy seems too thick, add a little water to adjust the consistency.
