For the Salad

  • 1 lb Potato and halved, baby potatoes, boiled, peeled
  • 1 cup Kidney Bean boiled, rajma
  • 1 cup Tomato chopped
  • 1 cup Cucumber chopped
  • 1/2 Onion optional, red, thinly sliced

Prepare the Potatoes

  • Boil the potatoes until tender. Peel them while still warm and cut each potato in half.

Make the Dressing

  • In a small bowl, whisk together the lemon juice, mustard oil, mustard powder, fennel seeds, roasted fenugreek leaves, chili powder, and salt.

Combine and Marinate

  • In a large bowl, combine the boiled potatoes, kidney beans, tomatoes, cucumber, and red onion (if using). Pour the dressing over the salad and toss gently to coat.

Rest and Serve

  • Let the salad sit for at least 15-20 minutes to allow the flavors to meld. Garnish with fresh cilantro before serving at room temperature.
