Ingredients
Fresh Rajma (Kidney Beans)
- 2 cup Kidney Beans rajma, fresh, removed from pods

- 2 tbsp Onion finely chopped
- 1 tsp Ginger finely chopped
- 1 tsp Chili finely chopped, green
- 1 tsp Cumin Seeds
- 1 tsp Chili Powder red
- 1.5 tsp Salt or to taste

- 1 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1 tbsp Coriander chopped, for garnish
- 1 Lemon Slice for garnish
- 1 piece Ginger for garnish, julienned
Instructions
- Heat the olive oil in a pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds until fragrant. This releases their aromatic oils and adds depth of flavor.
- Add the chopped onion, ginger, and green chili to the pan. Sauté for 2-3 minutes until the onions soften and become translucent.
- Add the fresh kidney beans, salt, and red chili powder to the pan. Stir well to combine.
- Pour in 1 cup of water, bring the mixture to a simmer, then cover the pan and cook for 10 minutes over low heat. This allows the beans to cook through and absorb the flavors of the spices.
- After 10 minutes, remove the lid and add the lemon juice. Cook for another 5 minutes uncovered, allowing some of the liquid to evaporate and the sauce to thicken slightly.
