Roasting the Makhana

  • Heat a heavy pan on low heat. Dry roast the makhana for 5-7 minutes, stirring often, until crisp.
  • Test for crispness by pressing one. It should break easily. Remove and set aside.

Tempering and Tossing

  • In the same pan, add ghee. Add curry leaves and let them crisp up.
  • Add almonds and toast lightly for 1-2 minutes.
  • Add turmeric, roasted cumin powder, black pepper, and salt. Stir for a few seconds.
  • Return the makhana to the pan and toss well so each piece is evenly coated. Cook for 1 more minute.
  • Cool fully and serve immediately or store in an airtight jar.
