- 2 cup Makhana Fox nuts, whole
- 1/4 cup Almonds Whole, raw
- 1 teaspoon Ghee Or use oil
- 1/4 teaspoon Turmeric Powder
- 1/4 teaspoon Cumin Powder Roasted
- 1/4 teaspoon Black Pepper Freshly ground
- 1/4 teaspoon Salt
- 8 Curry Leaves Optional
Instructions
Roasting the Makhana
- Heat a heavy pan on low heat. Dry roast the makhana for 5-7 minutes, stirring often, until crisp.
- Test for crispness by pressing one. It should break easily. Remove and set aside.
Tempering and Tossing
- In the same pan, add ghee. Add curry leaves and let them crisp up.
- Add almonds and toast lightly for 1-2 minutes.
- Add turmeric, roasted cumin powder, black pepper, and salt. Stir for a few seconds.
- Return the makhana to the pan and toss well so each piece is evenly coated. Cook for 1 more minute.
- Cool fully and serve immediately or store in an airtight jar.
