Instructions
Roasting the Makhana
Heat a heavy pan on low heat. Dry
roast
the makhana for 5-7 minutes, stirring often, until crisp.
Test for crispness by pressing one. It should break easily. Remove and set aside.
Tempering and Tossing
In the same pan, add ghee. Add curry leaves and let them crisp up.
Add almonds and toast lightly for 1-2 minutes.
Add turmeric, roasted cumin powder, black pepper, and salt. Stir for a few seconds.
Return the makhana to the pan and toss well so each piece is evenly coated. Cook for 1 more minute.
Cool fully and serve immediately or store in an airtight jar.
