Ingredients
- 150 gm Semolina semonella
- 1 cup Yogurt curd
- 1/2 tsp Salt
- 1 tsp Cumin Seed 1 tsp
- 2 Potato boiled, mashed, medium sized
- 1 cup Onion chopped
- tsp Chilli Powder mirch, cumin, half, salt
- 1 tsp Cumin Seed 2 tsp oil
Instructions
Prepare the Dokla Batter
- Combine semolina, yogurt, salt, baking soda, and cumin seeds in a bowl. Gradually add water, whisking constantly until you achieve a smooth, pourable batter. Let it rest for 15 minutes.
Prepare the Spiced Potato Filling
- Heat oil in a pan. Add mustard seeds and let them splutter. Add chopped onions and sauté until translucent. Add mashed potatoes, chili powder, turmeric powder, cumin powder, and salt. Mix well and cook for 2-3 minutes.
Steam the Dokla
- Grease a deep bowl or a steamer with ghee or oil. Pour half of the batter into the greased bowl. Spread the potato filling evenly over the batter. Pour the remaining batter on top.
Steam and Temper
- Steam the dokla for 15-20 minutes, or until a toothpick inserted comes out clean. Meanwhile, prepare the tadka: Heat oil in a pan, add mustard seeds, green chilies, and curry leaves. Once the mustard seeds splutter, remove from heat.
Finishing Touch
- Remove the steamed dokla from the steamer. Pour the tadka evenly over the top. Let it cool slightly before cutting and serving.
