Instructions
- Wash the eggplant and pat it dry. Choose a firm and shiny eggplant for the best flavor and texture.
- Prick the eggplant all over with a fork. This prevents steam from building up and bursting the eggplant while roasting.
- Rub the eggplant with olive oil.
- Roast the Eggplant (Choose your preferred method):
- Place the eggplant directly on a gas burner over low heat. Turn frequently with tongs until charred and tender on all sides (about 20-30 minutes).
- Preheat oven to 350°F (175°C). Place the eggplant on a baking sheet and roast for 45-60 minutes, or until the skin collapses and the flesh is very soft. Turn occasionally for even cooking.
- Once roasted, place the hot eggplant in a bowl and cover tightly with aluminum foil for 10 minutes. This helps the skin separate from the flesh.
- After 10 minutes, transfer the eggplant to a colander and let it cool completely. This allows excess moisture to drain, resulting in a creamier Baba Ghanoush.
- Peel off the charred skin. Discard the skin.
- Lightly mash the eggplant with a fork until mostly smooth. For a smoother dip, pulse briefly in a food processor. Avoid over-processing, as a little texture is desirable.
- In a bowl, combine the mashed eggplant, minced garlic, lemon juice, tahini, olive oil, and salt.
- Mix well with a fork or whisk until thoroughly combined. Do not overmix.
- Transfer the Baba Ghanoush to a serving bowl. Drizzle with olive oil and garnish with fresh parsley.
- Serve immediately with pita bread, crackers, or vegetables. For a chilled dip, refrigerate for at least 30 minutes before serving.
