Instructions

Prepare the Chicken

  • Slit each chicken leg lengthwise to allow for even cooking and better marinade penetration. In a bowl, combine the chicken legs with dark soy sauce, black pepper, and salt. Mix thoroughly to coat the chicken evenly. Marinate for at least 30 minutes, or preferably up to 2 hours in the refrigerator for maximum flavor.

Cook the Chicken

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Once the oil is hot (it should shimmer), add the marinated chicken legs. Cook for 5 minutes per side, ensuring a nice sear develops.

Finish Cooking

  • Reduce the heat to medium, cover the skillet with a lid, and cook for another 5 minutes. Remove the lid, and continue to cook on medium heat, adding 1-2 tablespoons of water as needed to prevent sticking or burning. Continue cooking until the chicken is fully cooked through and the juices run clear, about 10-15 minutes total cooking time.

Serve

  • Once the chicken is crispy and cooked through, remove it from the skillet and serve immediately. Serve hot with steamed rice and your favorite dipping sauce, such as Sichuan sauce or a simple chili garlic sauce.

Recipe Notes

Expert Tips for Perfect Soy Sauce Chicken Legs

  • For extra crispy skin, pat the chicken legs dry with paper towels before searing.
  • Don't overcrowd the pan. Cook the chicken in batches if necessary to ensure even browning and cooking.
  • Feel free to add other aromatics to the marinade, such as garlic, ginger, or scallions.
  • For a richer flavor, use a combination of light and dark soy sauce.
