Instructions

Prepare the Chicken

  • Make several deep cuts in the chicken leg quarters to help them cook evenly and absorb the marinade.

Marinate the Chicken

  • In a large bowl, combine the balsamic vinegar, honey, soy sauce, salt, sugar, pepper, rosemary, and minced garlic. Add the chicken legs and mushrooms, ensuring they are well coated in the marinade. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.

Cook the Chicken

  • Preheat oven to 400°F (200°C). If desired, heat olive oil in an oven-safe skillet over medium-high heat. Brown the chicken legs for 2-3 minutes per side. Transfer the skillet to the preheated oven.
  • Bake for 30-40 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. Baste the chicken with the marinade several times during cooking.

Serve

  • Remove the chicken from the oven and let it rest for 5-10 minutes before serving. Serve hot with your favorite sides.

Recipe Notes

Expert Tips

  • For extra flavor, marinate the chicken overnight.
  • If you don't have fresh rosemary, dried rosemary will work, but use a little less (about ½ teaspoon).
  • To prevent burning, keep an eye on the chicken while baking. You can also tent it with foil during the last 15 minutes of cooking if necessary.
  • Add a splash of chicken broth to the skillet for extra moisture during baking.
