Instructions

Marinate the Chicken

  • Marinate the chicken legs in a mixture of white vinegar, ginger paste, black salt, paprika, and salt for at least 2 hours, or preferably overnight in the refrigerator.

Partially Cook Chicken (Optional)

  • If using a tandoor oven, cook the marinated chicken legs until about 70% cooked. This step adds smoky flavor and tenderizes the meat. If you don't have access to a tandoor, you can skip this step and proceed directly to the next.

Prepare the Orange Marmalade Sauce

  • In a saucepan over medium heat, combine orange marmalade, freshly squeezed orange juice, orange zest, and butter. Cook, stirring frequently, until the sauce thickens slightly and the flavors meld.

Glaze the Chicken

  • Add the partially cooked (or raw) chicken legs to the orange marmalade sauce. Toss gently to coat the chicken evenly. Simmer until the chicken is fully cooked through and the sauce has thickened to your liking, about 10-15 minutes.

Garnish and Serve

  • Place two Chinese cabbage leaves (or other greens) on a serving plate. Arrange the glazed chicken legs on top, garnishing each leg with a thin orange slice.
  • Serve immediately and enjoy!

Recipe Notes

Expert Tips for the Best Orange Marmalade Glazed Chicken:

  • For a richer flavor, use high-quality orange marmalade with pieces of orange peel.
  • Adjust the amount of paprika to your desired level of spice. Start with less and add more to taste.
  • If the sauce becomes too thick, add a tablespoon or two of water or orange juice to thin it out.
  • For extra visual appeal, you can use a sprig of fresh rosemary or thyme as an additional garnish.
