Ingredients
- 1 cup Beetroot Peeled and finely chopped
- 1 teaspoon Oil Any neutral cooking oil
- 1 teaspoon Mustard Seeds
- 6 Curry Leaves
- 1/4 teaspoon Turmeric Powder
- 3/4 teaspoon Salt Or as required
- 1 tbsp Coriander Leaves Finely chopped, for finishing
Instructions
Cooking the Poriyal
- Heat oil in a pan on medium heat. Add mustard seeds and let them splutter.
- Add curry leaves and chopped beetroot. Mix well so the beetroot is lightly coated with oil.
- Add turmeric powder and salt. Sprinkle 2–3 tablespoons of water, cover, and cook on low heat until the beetroot is soft and fully cooked.
- Remove the lid and cook for 2–3 minutes until the poriyal looks dry with no excess moisture.
- Add chopped coriander leaves, mix gently, and switch off the heat.
