Cooking the Poriyal

  • Heat oil in a pan on medium heat. Add mustard seeds and let them splutter.
  • Add curry leaves and chopped beetroot. Mix well so the beetroot is lightly coated with oil.
  • Add turmeric powder and salt. Sprinkle 2–3 tablespoons of water, cover, and cook on low heat until the beetroot is soft and fully cooked.
  • Remove the lid and cook for 2–3 minutes until the poriyal looks dry with no excess moisture.
  • Add chopped coriander leaves, mix gently, and switch off the heat.

This is a dry vegetable dish and works best as part of a complete plate with dal, roti, or a curd-based side.
