Ingredients
- 2 tablespoons olive oil
- 1 onion diced
- 1 red bell pepper diced
- 4 garlic cloves minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili flakes
- 1 can 28 oz crushed tomatoes
- Salt to taste
- Pepper to taste
- 4-6 eggs
- Parsley Fresh, for garnish
- Feta cheese optional
Instructions
- Heat olive oil in a large skillet over medium heat
- Add onion and bell pepper, cook for 5 minutes until softened
- Add garlic, cumin, paprika and chili flakes, cook for 1 minute
- Pour in crushed tomatoes, season with salt and pepper
- Simmer for 10 minutes until sauce thickens
- Make small wells in the sauce and crack eggs into them
- Cover and cook for 5-8 minutes until eggs are set
- Garnish with parsley and feta, serve with crusty bread
Recipe Notes
- For a milder version, skip the chili flakes.
- Best served immediately straight from the pan with warm pita or crusty bread.
