Ingredients
 

Produce

  • 1 Onion chopped, large
  • 4 clove Garlic minced
  • 1 Chili finely chopped (adjust to your spice preference), green
  • 1 Bell Peppers chopped, medium
  • 4 Tomatoes diced, medium
  • 2 tbsp Parsley chopped, for garnish, fresh

Spices & Seasonings

  • 1/2 tsp Coriander ground
  • 1/2 tsp Paprika smoked paprika recommended
  • 1 tsp Cumin ground
  • 1/2 tsp Salt to taste
  • 1/4 tsp Pepper black, freshly ground, to taste
  • 1/2 tsp Sugar

Other Ingredients

  • 6 Eggs large
  • 1 tbsp Olive Oil
  • 4-6 slices Bread for serving (crust bread or pita)

Instructions
 

Prepare the Vegetables

  • Chop the onion, green chili, garlic, tomatoes, and bell pepper.

Sauté Aromatics

  • Heat olive oil in a large pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and green chili and sauté for another minute until fragrant.

Build the Sauce

  • Stir in the cumin, coriander, paprika, salt, pepper, and sugar. Cook for 1 minute, stirring constantly. Add the diced tomatoes and bell pepper and cook until softened, about 5-7 minutes.

Create Wells & Crack Eggs

  • Make six wells in the tomato sauce using the back of a spoon. Crack the eggs one by one into each well, being careful not to break the yolks.

Simmer & Garnish

  • Reduce heat to low, cover the pan, and cook for 5-7 minutes, or until the egg whites are set and the yolks are cooked to your liking. Sprinkle with fresh parsley.

Serve

  • Serve immediately with your choice of bread for dipping.
